Okay, I have to say this up-front – this strawberry coconut milk smoothie is AMAZING. It is SO FRESH, you WILL want this over and over again!

Particularly great on a hot summer day, it will be a great way to trick yourself in to thinking you are on some island paradise somewhere!

This also has a really great deep flavour, which you might be able to tell from the pictures!

The great thing about this strawberry coconut milk smoothie is that it is really good for you. Coconuts are a great source of good-for-you fats, and strawberries are great with all their fruit nutrients.

We all know we need to get in our 5-a-day, and strawberries are a great-tasting, fun way to do it! Strawberries are great: they are high in Vitamin C (which contributes to collagen formation), high in Folate (which helps to make blood cells), and are high in fibre (which helps to maintain good digestive health).

It’s a low carb strawberry smoothie

Although not quite low enough in net carbs to be a Keto smoothie, this is a great low carb smoothie. Checking in at 19.6g of carbs, that’s less than 1 small potato and less than 1 medium sweet potato. So if you are trying to keep the amount of carbohydrates you consume down, this could be a great option for you!

It’s a coconut milkshake with a twist!

Do you love coconut shakes?! Well this is like a coconut shake, but with a bit of a twist – it also has strawberries in it! That strawberry flavour adds quite a lot to this, so it’s not quite so strong a coconut flavour. Combined with the yogurt, this turns it into a strawberry coconut smoothie that you will want to keep coming back to.

Fruit smoothies with coconut milk are amazing. The same can be said for coconut yogurt. You’ll have no problems making this coconut milk smoothie recipe. It’s so simple to put together, as it only has 3 main ingredients, plus some sweetener.

It’s also made with some pretty standard ingredients. If, however, you can’t get hold of a good coconut yogurt, you can substitute for a plain yogurt. But I would reduce the amount of yogurt slightly, and offset with a bit more coconut milk. The reason for this would be to keep the coconut flavour. You could do 50g-75g plain yogurt, and add 25ml-50ml of coconut milk instead.

Ingredients

Strawberries – You can use fresh or frozen strawberries for this strawberry coconut smoothie.

Coconut milk – You can either buy this in a store, or, if you don’t have any (or if you prefer to know EXACTLY what is in your food) you can make your own coconut milk. It is super-simple to do, and makes it a lot cheaper than buying it in a store! Follow my organic coconut milk recipe here.

Coconut yogurt – Something to note with coconut yogurt is that each brand can be very different from each other. Some are pure coconut yogurt, some are dairy yogurt with coconut flavouring, some are soy-based, some have added sugar, and some are a mix. So you really have to use a coconut yogurt in your coconut milkshake that fits in your diet. I like So Delicious unsweetened coconut yogurt because it is made with organic coconut milk and doesn’t have added sweeteners.

Stevia, or other natural sweetener. A good alternative is Erythritol.

Steps

First, prepare your ingredients.

If you are using frozen strawberries, blend them first in to a kind of crushed ice. This will help them blend into the final coconut milk fruit smoothie. If you don’t blend them first, sometimes they may not break up fully, and you could be left with chunks of strawberry in the coconut shake.

Add the coconut milk.

Next, add the coconut yogurt.

Add the Stevia, or other natural sweetener such as Erythritol.

  2. Add the remaining ingredients.

Notes

  • If you like your smoothie cold, I suggest using frozen strawberries.
  • You can use my organic homemade coconut milk recipe if you do not have coconut milk to hand. I prefer making my own because it means I know exactly what's in it, and know it has no preservatives or stabilisers.
  • Not all coconut yogurts are created equal. Some are high in sugar, some low. So make sure you pick one that best fits your diet.
