So, I am not a huge fan of coconut. I have never really liked it, and traditionally found the flavour overpowering and not something I ever enjoyed.

Until I started making coconut-based smoothies.

Let me tell you, coconut milk and coconut yogurt are some of the most AMAZING ingredients to throw in a smoothie.

Why you need to try this Keto low carb coconut milk smoothie

It’s a strawberry coconut milk smoothie! What’s not to like?!

Okay, let’s be honest. Coconut and strawberry together is this totally surprising flavour mix that is just incredible. It is quite possibly one of the freshest flavour mixes out there. Strawberry and coconut milk together in a smoothie is the kind of drink that will convince you that you are on a beach somewhere, lapping up the sun.

And the thing about such a great-tasting smoothie is that you will actually want to have it, which is important if you are doing something like trying out a new diet or trying to stick to a diet. The fact that this is a Keto-friendly low carb strawberry coconut milk smoothie AND that it tastes amazing, means it’s a winner in my book!

Oh, and those of you worried about the different nuts, fear not – neither of the nuts flavours overdo the other. They complement very well. And once you add the almond butter and avocado, you get that great smooth texture.

It’s like a coconut milkshake, but it’s good for you.

Okay, so, we all love a good milkshake. And a coconut milkshake is no exception. But milkshakes aren’t traditionally that great for you. They are usually full of manufactured sugar, bad fats, artificial flavours and artificial sweeteners. That’s not what we’re going for when we’re trying to be healthy!

The thing with this Keto coconut milk smoothie recipe is that it’s actually good for you! It only uses natural ingredients and is chock full of fruit and nuts. Wouldn’t you like to have a coconut milkshake and know that everything about it was good for you?!

It’s a strawberry coconut smoothie full of healthy fats.

So, coconut is not the only healthy fat in this coconut milk smoothie recipe. Not even close! You see, this coconut shake also has almond butter (WHICH I LOVE!!!) and avocado. You could say this is a healthy fat -packed coconut milkshake!

For those of you that don’t know, the basics of it are that there are good fats and bad fats out there. Without getting deep in to it, coconut, avocado and almonds are CHOCK FULL of healthy fats.

For those of you on a Keto diet, those healthy fats that are the basis for this strawberry coconut milk smoothie are just what you are looking for to boost your calorie intake without going over your carb limit. They will be the things that keep you going all day!

Things to look out for and swaps

Rather than using a store-bought coconut milk, I recommend making your own coconut milk. It is INCREDIBLY easy, and it means that you know EXACTLY what is in the coconut milk. Most store-bought coconut milks have preservatives, stabilisers – i.e., a bunch of manufactured stuff – to keep it thick and stop it from going off. Myself, well, I just don’t want to put that stuff in my body. Further, it is WAY cheaper to make your own coconut milk, and you can use the pulp that is leftover for your own baking! The recipe posted here will make a small glass. That’s because that small glass is a whopping 409 calories! Fats are incredibly calorie-dense. So think of this like a little treat in a glass that packs a punch!

If you are using frozen strawberries, but sure to blend them first in to a kind of crushed ice form. This will help them blend better in the to the final smoothie.

  • Frozen (or fresh) strawberries.
  • Homemade coconut milk (you can follow my recipe here).
  • Almond butter.
  • Avocado.
  • Stevia.

Steps

Prepare the ingredients. If you don’t have coconut milk, you can make your own by following my organic coconut milk recipe.
